Order up a serving of callos a la madrilena (hot pot of spicy beef tripe) and oreja de cerdo (pig ears fried in garlic). After all, you can’t enjoy a Madrid holiday without some tasty fried pig ears (really, it tastes incredible!).
We’re not sure if we even have to tell you about the nightlife here, but we’ll do it anyway. The best neighbourhoods for getting wild in are Bilbao, Tribunal, Atocha and Moncloa. There’s plenty of others, but these are the best. Just remember that the Spanish like to get the night started later than usual, so don’t be the person who shows up early to the party.
